Classic Cassava Cake

You will need

  • 1 kg peeled cassava, rinsed
  • ¼ part half mature coconut
  • 150 gr brown sugar, mashed
  • 2 pandan leaves

For the sprinkles

    • {% fairly aged coconut, thinly grated ¼ tsp salt} mixed, and steamed
    • 100 gr granulated sugar for sprinkles

What you do

  1. Slice the cassava into 5 cm slices, steam until well done, about 45 minutes. Remove and pound while still hot.
  2. Mix the pounded cassava, grated coconut, mashed brown sugar, and sliced pandan leaves together. Place in a pan and press down firmly. Steam for about 30 minutes. Remove from heat and let cool.
  3. When cool, cut according to your own taste, then sprinkle with a mixture of the grated coconut, and granulated sugar.

Serve approximately 10 small plates.
